Umami - The Fifth Taste
You'll all know about sweet, sour, salty and bitter, but have you ever wondered why some foods taste meaty? The term umami was coined in 1908 to describe savoury, meaty, broth-like flavours. It's present in parmesan, kelp, shiitake mushrooms, naturally fermented soy sauce and my favourite, Marmite.

I had forgotten what the meaty taste was called and was trying to explain to someone in America what Marmite tastes like. When I'd looked up umami and told them that, they said they loved stuff that had that kind of taste and now are anxious to try it.
