Ingredients:
2 cups flour
2/3 cup baking cocoa
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 small supermarket saver bar of chocolate, chopped into pieces of your own choice
1 small bag of Maltesers
1 1/3 cups milk
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla
Method:
Preheat oven to 400°F/200°C/Gas Mark 6
Coat muffin tins with non-stick cooking spray (if you would like crusty muffins) OR line muffin tins with paper cases
Place a Malteser into each hole
In a large bowl, combine flour, baking powder, sugar, cocoa and salt
Add the broken up chocolate.
In a separate bowl, combine the liquid ingredients and whisk until smooth
Fold into the dry ingredients just until moist - DO NOT overmix!
Spoon evenly into the prepared muffin tins
Poke a second Malteser into each raw muffin
Bake for 20 minutes or until a toothpick inserted in the centre comes out clean
Cool on a wire rack before removing from the pan.
I couldn't help myself. He sat there, looking smug and I knew I was going to get him for it. He couldn't run away. He was mine for the taking. I really couldn't help it. I whispered in his ear what I was going to do. He looked scared.
I showed him the knife I had chosen especially for the task. In my head, I could hear the dramatic slash music from Psycho. It was now or never.
I plunged the knife into the side of his head and sliced down. His face smudged from the tears, but it was too late.
His head split asunder, I gouged out his seeds and roasted them with a sprinkling of oil and some salt, whilst baking his flesh. I sat, nonchalantly, watching Forensic Files on the telly as I skinned him, before blitzing his remains in a blender. I made muffins and pies and ate him... he was delicious.
